13 - 1/4 teaspoon ground turmeric
14 - 1/2 teaspoon smoked paprika
15 - Salt and freshly ground black pepper to taste
16 - 2 tablespoons fresh parsley or coriander, chopped

# How-To Steps:

01 - Heat the olive oil in a large pot over medium heat. Add the red onion and garlic, sauté for 2-3 minutes until softened and fragrant.
02 - Add the diced beetroot, sliced carrots, and diced green bell pepper to the pot. Cook for 4-5 minutes, stirring occasionally until vegetables begin to soften.
03 - Stir in the diced courgette and chopped tomatoes. Sprinkle in the ground cumin, ground turmeric, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes to bloom the spices.
04 - Pour in the vegetable broth and bring to a boil over high heat. Reduce heat to low and simmer uncovered for 20-25 minutes until all vegetables are tender and fully cooked.
05 - Stir in the baby spinach if using and simmer for an additional 2 minutes until wilted and incorporated.
06 - Remove the pot from heat. Add the lemon juice and adjust seasoning with additional salt and pepper as needed.
07 - Ladle the soup into serving bowls and garnish with fresh chopped parsley or coriander.

# Expert Suggestions:

01 -
  • It tastes so vibrant and alive that you'll actually look forward to eating your vegetables without any guilt or sacrifice.
  • Ready in under an hour, which means you can have a nourishing meal on the table even on nights when cooking feels like too much.
  • Every color on your plate tells you something different about what your body's getting, which feels honest and intentional.
02 -
  • Don't rush the initial sauté of onion and garlic; those few minutes create the flavor foundation that makes the difference between soup and just hot vegetable water.
  • The lemon juice at the end isn't optional flavoring, it's the thing that makes all the spices and earthy vegetables suddenly sing and taste alive.
03 -
  • Cut all your vegetables roughly the same size so they cook evenly and the soup has a balanced texture instead of some pieces mushy and others still firm.
  • If your broth tastes a little bland on its own, this soup will reveal that, so choose one you'd actually enjoy drinking straight from a mug.
